Makes 4 serving(s)
WHAT'S IN IT?
10 oz. pre-bagged, fresh baby spinach (about 5 cups)
1 large Red Delicious or Braeburn apple
1/4 cup frozen orange juice concentrate, thawed
1/4 cup real bacon pieces (with 50% less fat)
STUFF YOU NEED
Large mixing bowl
Cutting board
Cutting knife
Small mixing bowl
Liquid measuring cup
Soup spoon
Tongs
Dry measuring cups
4 salad bowls or lunch-size plates
4 salad forks
HOW TO PUT IT TOGETHER
- Toss the spinach into a large mixing bowl.
- Plop the apple onto a cutting board. With a cutting knife, slice the apple into thin slices, making sure to remove the coresince the seeds aren't meant for eating!
- Into a small mixing bowl, ooze in the thawed orange juice concentrate from a liquid measuring cup. Make sure all the concentrate dribbles out of the cup into the mixing bowl. Use a soup spoon to help!
- With the spoon, crank the goopy mixture of thawed orange juice concentrate with the crispy, sliced apple. This is your Funky Fruity Dressing!
- Into the large mixing bowl, plop the dressing over the spinach.
- With tongs, mess up all the ingredients until all the spinach has been coated by the Funky Fruity Dressing.
- For the finale, sprinkle the bacon bits from a dry measuring cup on top of the salad. It adds pizzazz!
- Throw the Sunshine Spinach Salad with Funky Fruity Dressing into 4 salad bowls or onto 4 lunch-size plates. Go for it with a salad fork!
