Bean Salad Ciao
Makes 6 serving(s)
WHAT'S IN IT?
3 (15.5 ounce) cans beans, 3 different colors (such as black, white cannellini and red kidney beans)
1 medium tomato
2 green onions (scallions), green and white parts
1 -2 large handfuls fresh Italian parsley leaves
1/4 cup vinaigrette or Italian salad dressing
STUFF YOU NEED
Can opener
Mesh strainer
Medium-size serving bowl
Cutting board
Cutting knife
Dry measuring cup
Liquid measuring cup
Large serving spoon
HOW TO PUT IT TOGETHER
- Crank open the cans of beans with a can opener.
- One can at a time, over the sink, pour the beans into a mesh strainer. Rinse the beans with cold water. Drain.
- Dribble all the beans into a medium-size serving bowl.
- On a cutting board, chop a tomato into pieces the size of miniature dice. Throw the tomato "dice" over the beans.
- Lay the green onions onto a cutting board. Chop them with a cutting knife. Scatter the onions into the serving bowl.
- Place the parsley leaves onto the cutting board. Chop and chop and chop them. You'll want about 1/4 cut of finely chopped parsley leaves in all. Sprinkle them into the serving bowl.
- Measure the dressing in a liquid measuring cup. Drizzle it over all the bean salad ingredients in the serving bowl.
- Dig a large serving spoon into the ciao. Stir it well just before serving. Then, chow down on this ciao!
