Rockin' Red Potato Salad
Makes 4 serving(s)
WHAT'S IN IT?
1 pound boiled, small red potatoes with skin, chilled*
1 green onion (use just the green part for this salad!)
1/4 cup light ranch dressing
STUFF YOU NEED
Cutting board
Cutting knife
Medium-size bowl
Liquid measuring cup
Large spoon
Pretty, medium-size serving bowl (if you like)
4 forks
4 small plates or bowls
HOW TO PUT IT TOGETHER
- Plunk the boiled, chilled potatoes onto a cutting board. Chop the potatoes into large, bite-size pieces with a cutting knife. Swish the potato pieces into a medium-size bowl.
- Lay the green onions on the cutting board. Mince just the green part into itty-bitty bites with the knife. Whack those on top of the potato pieces.
- Drip the dressing from a liquid measuring cup on top of the potato pieces and green onion bites.
- Mingle all ingredients together with a large spoon, making sure to coat all the potato pieces and onion bites with the dressing.
- Serve straight from the bowl. Or, dump it into a prettier bowl for party time!
- Don't forget the forks and small plates or bowls. And, don't forget the tunes! Time to rock!
