BBQ Chicken Pizza

WHAT'S IN IT?

1 (10 oz) package, pre-baked thin Italian pizza crust
1/2 cup barbecue sauce
1 (10-ounce) package carved, roasted chicken breast meat (or 2 cups leftover shredded or diced chicken breast pieces)
3/4 cup (3 oz) shredded Monterey Jack cheese
3/4 cup (3 oz) shredded part-skim mozzarella cheese
1 medium green bell pepper
1 small red onion
Fresh cilantro leaves (about 1/4 cup chopped or 1/2 cup whole leaves)

STUFF YOU NEED

Large baking sheet or pizza pan
Spoon
Liquid measuring cup
Dry measuring cup
Cutting board
Cutting knife
Potholders
Cooling rack (optional)
Pizza cutter

HOW TO PUT IT TOGETHER

  1. Preheat the oven to 450°F. (Ask an adult for permission to use the oven!)
  2. Unwrap the pizza crust and plunk it on a large baking sheet or pizza pan.
  3. Measure the BBQ sauce into the liquid measuring cup. Then, use a spoon to smear the BBQ sauce all over the crust, leaving only about 1 inch of the ends uncoated.
  4. Fling the chicken all over the sauce. Sprinkle with the cheeses.
  5. Place the pepper and onion on a cutting board. Remove the core and seeds from the pepper. Then, thinly slice the pepper and onion. Scatter the slices over the pizza.
  6. Stick the tray of pizza into the oven on the middle rack. Bake for 12 to 15 minutes, or until the cheese is melted and crust is brown.
  7. Remove the tray from the oven with potholders. Place the tray onto a cooling rack or cool stovetop.
  8. After cooling for about 3 minutes, use the potholders to slide the pizza onto a cutting board.
  9. Sprinkle with chopped or whole cilantro leaves.
  10. Divide with a pizza cutter into 6 slices. Open up, say "ahhh" and savor the 'za!
